Ingredients
8 oz spaghetti or soba noodles
3 tbsp sesame oil
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp peanut butter or tahini
1 tsp honey or maple syrup
1 tsp fresh ginger, grated
1 clove garlic, minced
1 tsp sriracha or chili flakes (optional)
1 cup shredded carrots
1 cup cucumber, julienned
1/4 cup green onions, chopped
2 tbsp sesame seeds
Fresh cilantro or basil for garnish (optional)
Instructions
Cook noodles according to package instructions. Drain and rinse under cold water.
In a bowl, whisk together sesame oil, soy sauce, vinegar, peanut butter, honey, ginger, garlic, and sriracha.
Toss noodles with sauce until well coated.
Add carrots, cucumber, and green onions. Mix to combine.
Sprinkle sesame seeds and garnish with herbs if using.
Chill for at least 15 minutes before serving.
Notes
Use gluten-free noodles and tamari for a gluten-free version.
Add grilled tofu, chicken, or shrimp for protein.
