Ingredients
3 ripe peaches, halved and pitted
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
5 oz arugula or mixed greens
2 balls fresh burrata cheese
Fresh basil leaves, torn
2 tablespoons balsamic glaze
Optional: chopped pistachios or walnuts for crunch
Instructions
Preheat grill or grill pan over medium heat.
Brush peach halves with olive oil and sprinkle with salt and pepper.
Grill peaches cut-side down for 3–4 minutes until grill marks appear and peaches are slightly softened.
Arrange arugula on a serving platter. Place grilled peaches on top.
Tear burrata and distribute evenly across the salad.
