Description

Ingredients

2 cups mixed salad greens (arugula, spinach, romaine)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup sweet corn (fresh or canned)

1/2 avocado, diced

1/4 cup feta cheese, crumbled

2 tbsp olive oil

1 tbsp lemon juice

1 tsp Dijon mustard

Salt and pepper to taste


Instructions

In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, corn, avocado, and feta cheese.

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.

Pour dressing over the salad and toss gently to combine.

Serve immediately or chill for 10 minutes before serving.
