Ingredients
4 cups mixed greens (arugula, spinach, or romaine)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1/2 cup radishes, thinly sliced
1/4 cup fresh basil leaves, torn
1 cup ricotta cheese
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
1 tsp lemon zest
1 tbsp olive oil
Salt and pepper to taste
Optional: balsamic glaze or vinaigrette for drizzling
Instructions
In a medium bowl, mix ricotta with parsley, chives, lemon zest, salt, and pepper. Stir until well combined.
In a large salad bowl, combine greens, tomatoes, cucumber, onion, radishes, and basil.
Add a dollop of herbed ricotta on top or gently mix into the salad.
Drizzle olive oil (and optional vinaigrette or glaze) over the salad.
Serve immediately while fresh and chilled.
