Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 1 packet taco seasoning
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
  • In a greased baking dish, spread an even layer of cooked rice.
  • Pour the beef mixture over the rice and spread evenly.
  • Top with shredded cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes.
  • Top with dollops of sour cream and sprinkle with chopped cilantro before serving, if desired.

Notes

  • For added heat, mix in some chopped jalapeños or hot sauce.
  • Serve with tortilla chips for extra crunch.
