Ingredients
- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup salsa
- 1 packet taco seasoning
- 2 cups cooked rice
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup chopped cilantro (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
- In a greased baking dish, spread an even layer of cooked rice.
- Pour the beef mixture over the rice and spread evenly.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
- Top with dollops of sour cream and sprinkle with chopped cilantro before serving, if desired.
Notes
- For added heat, mix in some chopped jalapeños or hot sauce.
- Serve with tortilla chips for extra crunch.
