Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 cup canned coconut milk (full fat)
  • 1 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 1 tsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • Fresh cilantro, chopped (for garnish)
  • Cooked jasmine rice (for serving)


Instructions

  1. Heat olive oil and butter in a skillet over medium heat.

  2. Sauté garlic, onion, and red bell pepper for 2–3 minutes until fragrant.

  3. Add shrimp and cook until pink and opaque, about 2–3 minutes per side. Remove and set aside.

  4. In the same skillet, add coconut milk, red curry paste, fish sauce, soy sauce, lime juice, and brown sugar. Stir to combine and simmer for 5 minutes.

  5. Return shrimp to skillet and simmer for 2 more minutes.

  6. Garnish with chopped cilantro and serve over jasmine rice.

Notes

Adjust spice level by varying the amount of red curry paste. You can add Thai basil or a splash of chili oil for extra heat.
