Ingredients

2 cups shredded rotisserie chicken (or grilled chicken)

3 cups coleslaw mix or shredded cabbage

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/4 cup chopped cilantro

1/4 cup chopped green onions

1/3 cup chopped roasted peanuts

Optional: sliced jalapeños, sesame seeds

For the Peanut Dressing:

1/4 cup creamy peanut butter

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp sesame oil

1 tsp grated fresh ginger

1 garlic clove, minced

23 tbsp warm water (to thin)


Instructions

In a large mixing bowl, combine the chicken, coleslaw mix, carrots, red bell pepper, cilantro, and green onions.

In a separate bowl, whisk together the peanut dressing ingredients until smooth. Add water gradually to reach desired consistency.

Pour the dressing over the salad and toss until everything is well coated.

Top with chopped peanuts and optional garnishes like jalapeños or sesame seeds.

Serve immediately or refrigerate for up to 2 days.
