Ingredients

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

2 cups cooked white or brown rice

1 tbsp vegetable oil

1 cup broccoli florets

1/2 cup sliced carrots

1/2 cup sliced bell peppers

1/4 cup chopped green onions

Sesame seeds for garnish

For the Teriyaki Sauce:

1/4 cup soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (slurry)


Instructions

  1. In a small saucepan over medium heat, combine soy sauce, honey, vinegar, sesame oil, garlic, and ginger.
  2. Bring to a simmer, then stir in the cornstarch slurry. Cook until thickened. Set aside.
  3. Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6–8 minutes.
  4. Add vegetables and stir-fry for 3–4 minutes until tender-crisp.
  5. Pour teriyaki sauce over the chicken and vegetables. Stir to coat evenly.
  6. Serve over cooked rice. Garnish with green onions and sesame seeds.

Notes

You can use store-bought teriyaki sauce for convenience.
