Ingredients
- 1 lb cheese tortellini (fresh or frozen)
- 6 slices bacon (chopped)
- 2 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- Salt and pepper (to taste)
- Fresh parsley (optional, for garnish)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving about 1 tbsp of bacon fat in the skillet.
- Add minced garlic to the skillet and sauté for 1 minute, until fragrant.
- In a small bowl, whisk together the eggs, heavy cream, and Parmesan cheese.
- Add the cooked tortellini to the skillet with the garlic, then remove the skillet from the heat.
- Slowly pour the egg mixture over the tortellini, stirring constantly to avoid scrambling the eggs.
- Stir in the crispy bacon and season with salt and pepper to taste.
- Garnish with fresh parsley and serve immediately.
