Ingredients

  • 1 lb cheese tortellini (fresh or frozen)
  • 6 slices bacon (chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper (to taste)
  • Fresh parsley (optional, for garnish)


Instructions

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving about 1 tbsp of bacon fat in the skillet.
  • Add minced garlic to the skillet and sauté for 1 minute, until fragrant.
  • In a small bowl, whisk together the eggs, heavy cream, and Parmesan cheese.
  • Add the cooked tortellini to the skillet with the garlic, then remove the skillet from the heat.
  • Slowly pour the egg mixture over the tortellini, stirring constantly to avoid scrambling the eggs.
  • Stir in the crispy bacon and season with salt and pepper to taste.
  • Garnish with fresh parsley and serve immediately.

  • For a lighter version, substitute half-and-half for heavy cream.
