Description

White Chocolate Raspberry Cheesecake Bars combine the richness of white chocolate with a tart raspberry swirl over a buttery graham cracker crust. Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Cream cheese
  • Granulated sugar
  • Eggs
  • White chocolate chips
  • Fresh raspberries
  • Raspberry jam
  • Vanilla extract


Instructions

  • Preheat the oven to 325°F (163°C) and line a 9x9-inch baking dish with parchment paper.
  • Mix graham cracker crumbs with melted butter and press into the bottom of the dish to form the crust.
  • Bake the crust for 10 minutes, then set aside to cool.
  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  • Melt white chocolate chips in the microwave, stirring until smooth, then fold into the cream cheese mixture.
  • Pour the cheesecake batter over the cooled crust.
  • In a small bowl, combine raspberry jam and fresh raspberries. Swirl the raspberry mixture over the cheesecake filling.
  • Bake for 35–40 minutes or until the cheesecake is set.
  • Let cool, then refrigerate for at least 2 hours before slicing into bars.

  • Use fresh raspberries for the best flavor, or substitute frozen raspberries if necessary.
