Ingredients
- 4 cups shredded zucchini
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese, divided
- 1 cup shredded cheddar cheese
- 1 pound Italian sausage, cooked and crumbled
- 1 cup pizza sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
Instructions
- Preheat oven to 400°F (200°C). Grease a 9x13 inch baking dish.
- Place shredded zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a large bowl, combine zucchini, eggs, Parmesan cheese, and 1 cup of mozzarella cheese. Press mixture into the prepared baking dish.
- Bake in preheated oven for 20 minutes.
- Remove from oven and spread pizza sauce over the zucchini crust. Top with cooked sausage, remaining mozzarella cheese, cheddar cheese, oregano, basil, and garlic powder.
- Return to oven and bake for an additional 20 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes before slicing and serving.
