Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1 tsp salt
- 2/3 cup cold water
- 1/2 cup unsalted butter, cold and cut into small pieces
For the Filling:
- 1 cup ham, diced
- 1 cup cheddar cheese, grated
- 1/2 onion, finely chopped
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions
- Make the Dough: In a large mixing bowl, combine the flour and salt. Add in the butter and rub it into the flour using your fingertips until the mixture resembles coarse breadcrumbs. Gradually add the cold water and mix until a dough forms. Knead briefly until smooth, then wrap in cling film and refrigerate for 30 minutes.
- Prepare the Filling: In a bowl, mix together the diced ham, grated cheese, chopped onion, salt, and pepper.
- Assemble the Pockets: Preheat your oven to 400°F (200°C). Roll out the dough on a floured surface to about 1/8-inch thickness. Using a round cutter or a glass, cut out circles from the dough. Place a tablespoon of the filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and seal the edges by pressing with a fork.
- Egg Wash: Brush the top of each pocket with the beaten egg. This will give the pockets a golden color when baked.
- Bake: Place the pockets on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
