Ingredients
- 3 cups apples, peeled and diced
- 1 cup vegetable oil
- 2 cups granulated sugar
- 3 large eggs
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup chopped walnuts or pecans (optional)
For the Caramel Glaze:
- 1/2 cup butter
- 1 cup brown sugar
- 1/4 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
- In a large bowl, mix oil, sugar, and eggs until smooth. Add flour, baking soda, salt, and cinnamon, stirring to combine.
- Fold in diced apples and nuts (if using).
- Pour batter into the prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
- While the cake cools, make the glaze by melting butter in a saucepan over medium heat. Add brown sugar and milk, stirring until smooth. Bring to a boil, then simmer for 2–3 minutes.
- Pour warm caramel glaze over the cooled cake before serving.
Notes
- Any variety of apple works well; tart apples like Granny Smith are especially flavorful.
- Serve with a scoop of vanilla ice cream for an extra treat!
