Description

Enjoy a speedy yet flavorful meal with this quick apricot chicken recipe. Featuring a succulent chicken breast cooked in a delectable apricot glaze, this dish is perfect for busy weeknights. Ready in just 30 minutes, it’s a sweet and savory delight that will please the whole family.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup apricot preserves
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season the chicken breasts with salt and pepper.
  • In a small bowl, mix together apricot preserves, soy sauce, apple cider vinegar, garlic, and ginger to make the glaze.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through.
  • Pour the apricot glaze over the chicken in the skillet. Reduce heat to medium and cook for an additional 5-7 minutes, turning the chicken to coat evenly, until the glaze is thickened and the chicken is well-coated.
  • Serve the chicken hot, garnished with fresh parsley.

Notes

  • For a spicier version, add a pinch of red pepper flakes to the glaze.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
