Ingredients

  • 1 can (14 oz) artichoke hearts, drained and coarsely chopped
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 sub rolls or baguettes, sliced open
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped artichoke hearts, marinara sauce, half of the grated Parmesan, garlic powder, oregano, salt, and pepper. Mix well.
  3. Generously spoon the artichoke mixture onto each sliced sub roll or baguette.
  4. Top each sandwich with shredded mozzarella and the remaining Parmesan cheese.
  5. Place the sandwiches on a baking tray and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

Notes

You can add some red pepper flakes for a spicy kick. For an even richer flavor, consider drizzling a little olive oil or adding a few slices of fresh tomato before baking.
