Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun-dried tomatoes (drained)
- 1 cup fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic until fragrant. Add chicken broth and heavy cream, stirring to combine.
- Stir in Parmesan cheese, sun-dried tomatoes, and spinach, and let the sauce simmer for 2-3 minutes.
- Return the chicken breasts to the skillet, spooning sauce over the top.
- Transfer skillet to the oven and bake for 20-25 minutes or until chicken is cooked through.
- Serve warm with sauce spooned over.
