Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach
- 1 ½ cups shredded mozzarella cheese
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil, chopped (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown but not fully cooked. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant, about 1 minute. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer until slightly thickened.
- In a greased 9x13-inch baking dish, layer fresh spinach and sun-dried tomatoes.
- Place the seared chicken breasts on top of the spinach and tomatoes. Pour the creamy sauce over the chicken.
- Top with shredded mozzarella cheese.
- Bake for 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
