Description

This baked Tuscan chicken casserole recipe combines tender chicken, spinach, sun-dried tomatoes, and a creamy, cheesy sauce for a flavorful and easy dinner. Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, chopped (optional, for garnish)


Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown but not fully cooked. Remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant, about 1 minute. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer until slightly thickened.
  • In a greased 9x13-inch baking dish, layer fresh spinach and sun-dried tomatoes.
  • Place the seared chicken breasts on top of the spinach and tomatoes. Pour the creamy sauce over the chicken.
  • Top with shredded mozzarella cheese.
  • Bake for 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  • Garnish with fresh basil before serving.
