A moist and flavorful banana bread recipe preppy kitchen that makes the perfect snack or breakfast, using overripe bananas
Ingredients
- 2 to 3 ripe bananas, mashed (about 1 to 1 1/2 cups)
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4x8-inch loaf pan.
- In a mixing bowl, mix the melted butter and mashed bananas.
- Stir in the sugar, beaten egg, and vanilla extract.
- Mix in the baking soda and salt.
- Gently fold in the flour until just combined. Do not overmix.
- Pour the batter into the greased loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For a nuttier version, you can add 1/2 cup of chopped walnuts or pecans.
- Chocolate chips can also be added for a sweeter touch.
