Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup caramel sauce (store-bought or homemade)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Mix in mashed bananas and vanilla extract.
  • Gradually add dry ingredients, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
  • Fold in chopped pecans.
  • Divide batter evenly between the prepared pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Spread a layer of caramel sauce over the top of one cake layer, then place the second cake layer on top. Drizzle additional caramel sauce over the top of the cake.

Notes

  • For extra flavor, toast the pecans before adding them to the batter.
  • Ensure cakes are completely cool before adding the caramel sauce to prevent it from melting.
