Description

Score a home run in the kitchen with these Baseball Cookies! Ideal for game days, parties, or any baseball enthusiast, these cookies are as delicious as they are charming.

Ingredients

For the Sugar Cookies:

  1. 2 3/4 cups all-purpose flour
  2. 1/2 teaspoon baking powder
  3. 1 cup unsalted butter, softened
  4. 1 1/2 cups white sugar
  5. 1 egg
  6. 1 teaspoon vanilla extract
  7. 1/2 teaspoon almond extract

For the Royal Icing:

  1. 3 cups powdered sugar
  2. 2 tablespoons meringue powder
  3. 5-6 tablespoons warm water
  4. Red food coloring

Instructions

  1. Cookies: Preheat oven to 375°F (190°C).
  2. In a medium bowl, stir together flour and baking powder. Set aside.
  3. In a large bowl, cream together butter and sugar until smooth. Beat in the egg and extracts.
  4. Gradually blend in the flour mixture.
  5. Roll out dough on a floured surface to 1/4 inch thickness. Cut into circles using a cookie cutter.
  6. Place cookies 1 inch apart on ungreased cookie sheets.
  7. Bake for 8 to 10 minutes or until cookies are just beginning to turn golden around the edges. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. Royal Icing: In a large bowl, whisk together powdered sugar and meringue powder.
  9. Add warm water one tablespoon at a time until the icing reaches a consistency like honey.
  10. Take a small portion of the icing and color it red. Keep the larger portion white.
  11. Using a piping bag or a small zipper bag with the corner cut off, pipe the white icing to completely cover each cookie.
  12. Once the white icing has set a bit, use the red icing to pipe on the baseball stitching details.
  13. Allow the icing to set completely before serving.
