Ingredients

2 cups cooked shredded chicken

1/2 cup BBQ sauce

4 slices sourdough or artisan bread

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tbsp butter (for spreading)

Optional: red onion slices, pickles, jalapeños for extra flavor

Instructions

In a bowl, mix shredded chicken with BBQ sauce until fully coated.

Butter one side of each bread slice.

Place buttered side down, layer cheddar cheese, BBQ chicken, mozzarella, and optional toppings.

Top with another slice of bread, buttered side up.

Grill sandwich in a skillet over medium heat for 3–4 minutes per side, until bread is golden and cheese is melted.

Remove from heat, slice, and serve hot.

Notes

Rotisserie chicken works great for this recipe.

Use your favorite BBQ sauce—smoky, sweet, or spicy.

Add a dash of hot sauce for extra kick.

Swap bread for ciabatta or brioche for variety.
