Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cups enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar cheese
- 1 can (4 oz) diced green chilies
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain excess fat.
- Stir in the enchilada sauce and diced green chilies. Season with salt and pepper.
- In a baking dish, layer half of the tortillas, half of the beef mixture, and half of the cheese. Repeat layers.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro and serve.
Notes
- For added heat, use spicy enchilada sauce or add jalapeños.
