Ingredients
- 1 lb ground beef
- 12 corn tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup onion (diced)
- 2 cloves garlic (minced)
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper (to taste)
- 1 tbsp olive oil
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until soft.
- Add ground beef, chili powder, cumin, paprika, salt, and pepper. Cook until the beef is browned. Drain any excess fat.
- Pour 1/2 cup of enchilada sauce into the beef mixture and stir to combine.
- In a greased baking dish, spread a thin layer of enchilada sauce at the bottom.
- Layer 4 corn tortillas across the bottom, followed by 1/3 of the beef mixture and a sprinkling of both cheeses. Repeat the layers twice more, ending with cheese on top.
- Pour the remaining enchilada sauce over the top layer.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly.
- Garnish with fresh cilantro and serve hot.
