Ingredients

  • 1 lb ground beef
  • 12 corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper (to taste)
  • 1 tbsp olive oil
  • Fresh cilantro (optional, for garnish)


Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until soft.
  • Add ground beef, chili powder, cumin, paprika, salt, and pepper. Cook until the beef is browned. Drain any excess fat.
  • Pour 1/2 cup of enchilada sauce into the beef mixture and stir to combine.
  • In a greased baking dish, spread a thin layer of enchilada sauce at the bottom.
  • Layer 4 corn tortillas across the bottom, followed by 1/3 of the beef mixture and a sprinkling of both cheeses. Repeat the layers twice more, ending with cheese on top.
  • Pour the remaining enchilada sauce over the top layer.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly.
  • Garnish with fresh cilantro and serve hot.
