Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1 can (6 oz) tomato paste
- 2 tsp chili powder
- Salt and pepper, to taste
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 2 cups shredded cheddar cheese
- 2 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Cook egg noodles according to package directions. Drain and set aside.
- In a large skillet, cook ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
- Stir in diced tomatoes, Rotel tomatoes, tomato paste, chili powder, salt, and pepper. Simmer for 10 minutes.
- In a large bowl, combine cooked egg noodles, sour cream, and cottage cheese.
- In a greased 9x13-inch baking dish, layer half of the noodle mixture, then half of the beef mixture. Repeat the layers.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired, and serve.
