Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (6 oz) tomato paste
  • 2 tsp chili powder
  • Salt and pepper, to taste
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles according to package directions. Drain and set aside.
  • In a large skillet, cook ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  • Stir in diced tomatoes, Rotel tomatoes, tomato paste, chili powder, salt, and pepper. Simmer for 10 minutes.
  • In a large bowl, combine cooked egg noodles, sour cream, and cottage cheese.
  • In a greased 9x13-inch baking dish, layer half of the noodle mixture, then half of the beef mixture. Repeat the layers.
  • Top with shredded cheddar cheese.
  • Bake for 25-30 minutes until the cheese is melted and bubbly.
  • Garnish with fresh parsley if desired, and serve.
