Ingredients
- 12 oz spaghetti or fettuccine
- 2 tbsp olive oil
- 2 chicken breasts, sliced thin
- 4 slices bacon, chopped
- 3 garlic cloves, minced
- 3 large eggs
- 1 cup grated parmesan cheese
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook spaghetti in salted water until al dente. Reserve 1 cup of pasta water. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Cook chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, cook bacon until crispy. Add garlic and sauté for 1 minute.
- In a bowl, whisk eggs, parmesan, and heavy cream (if using).
- Toss the cooked pasta in the skillet with bacon and garlic. Turn off the heat.
- Slowly pour the egg mixture over the pasta, tossing quickly to coat and prevent scrambling.
- Add chicken back into the skillet. Use reserved pasta water to thin the sauce if needed.
- Season with salt, pepper, and garnish with parsley before serving.
