Ingredients

  • 4 cups Bing cherries, pitted and chopped
  • 1 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) powdered fruit pectin

Instructions

  • In a large bowl, combine chopped Bing cherries and sugar. Let stand for 10 minutes.
  • In a small saucepan, mix lemon juice and pectin. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute.
  • Pour the pectin mixture over the cherries and stir for 3 minutes until sugar is dissolved.
  • Ladle the jam into clean, freezer-safe containers, leaving 1/2 inch headspace.
  • Let the jam stand at room temperature for 24 hours to set.
  • Store in the freezer for up to 1 year, or in the refrigerator for up to 3 weeks.
