Description

Ingredients

  • Crust:
    • 2 cups Biscoff cookies, crushed
    • 1/4 cup sugar
    • 1/2 cup butter, melted
  • Cheesecake Filling:
    • 24 oz cream cheese, softened
    • 1 cup sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 1/2 cup Biscoff spread
  • Topping:
    • 1/4 cup Biscoff spread (for drizzling or swirling)
    • Crushed Biscoff cookies (optional, for garnish)

Instructions

  • Crust:
    Mix crushed Biscoff cookies, sugar, and melted butter. Press into the bottom of a springform pan and bake at 350°F for 8-10 minutes. Let cool.
  • Cheesecake Filling:
    Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and Biscoff spread until fully combined.
  • Pour the cheesecake filling over the crust and smooth the top.
  • Warm the extra Biscoff spread and drizzle or swirl it into the top of the cheesecake batter.
  • Bake at 325°F for 50-60 minutes or until the center is set. Cool the cheesecake completely, then refrigerate for at least 4 hours before serving.
  • Garnish with additional crushed Biscoff cookies if desired.

Notes

  • To make this cheesecake no-bake, use gelatin to set the cheesecake instead of baking.
