Description

Black Bean and Beef Enchilada Casserole is a layered Mexican-inspired dish combining seasoned ground beef, black beans, and enchilada sauce with melted cheese and tortillas. This easy casserole is a comforting meal that’s perfect for weeknight dinners or potlucks, delivering bold flavors in every bite.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, diced
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 8 small corn tortillas (or flour tortillas)
  • 2 tbsp olive oil
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños


Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sauté the diced onion until soft, about 3-4 minutes.
  • Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  • Stir in chili powder, cumin, garlic powder, salt, diced tomatoes, and black beans. Simmer for 5 minutes.
  • Grease a 9x13-inch baking dish. Spread a thin layer of enchilada sauce at the bottom.
  • Layer 4 tortillas on the sauce, followed by half of the beef and bean mixture, 1 cup of cheese, and more enchilada sauce.
  • Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  • Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes, until cheese is bubbly.
  • Garnish with optional toppings and serve hot.

Notes

  • You can substitute ground turkey for a leaner version.
  • Adjust the spice level by adding jalapeños or more chili powder.
  • For extra creaminess, add a layer of sour cream between the tortillas and beef mixture.
