Description

These blueberry cream cheese bars are made with a buttery graham cracker crust, a rich cream cheese filling, and a sweet blueberry topping. Perfect for summer gatherings or a refreshing dessert, these bars are easy to make and full of fruity flavor with a creamy texture.


Ingredients

  • Crust:
    • 2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup butter, melted
  • Cream Cheese Filling:
    • 16 oz cream cheese, softened
    • 3/4 cup sugar
    • 2 large eggs
    • 1 tsp vanilla extract
  • Blueberry Topping:
    • 2 cups fresh or frozen blueberries
    • 1/4 cup sugar
    • 1 tbsp lemon juice
    • 1 tbsp cornstarch
    • 2 tbsp water

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish.
  • For the crust, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the dish and bake for 10 minutes.
  • In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in the vanilla. Pour the cream cheese mixture over the baked crust.
  • In a saucepan, cook blueberries, sugar, lemon juice, and cornstarch mixed with water over medium heat until thickened. Let cool slightly, then spoon over the cream cheese layer.
  • Bake for 30-35 minutes until set. Cool, then refrigerate for at least 3 hours before slicing into bars.

Notes

  • You can substitute blueberries with raspberries or mixed berries for a variation.
