Description

Ingredients
- Crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- Cream Cheese Filling:
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- Blueberry Topping:
- 2 cups fresh or frozen blueberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish.
- For the crust, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the dish and bake for 10 minutes.
- In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in the vanilla. Pour the cream cheese mixture over the baked crust.
- In a saucepan, cook blueberries, sugar, lemon juice, and cornstarch mixed with water over medium heat until thickened. Let cool slightly, then spoon over the cream cheese layer.
- Bake for 30-35 minutes until set. Cool, then refrigerate for at least 3 hours before slicing into bars.
Notes
- You can substitute blueberries with raspberries or mixed berries for a variation.
- Chill the bars overnight for the best texture and flavor.
