Description

This blueberry fluffy cottage cheese cloud bread is a high-protein, low-carb delight! Made with simple ingredients, it's soft, airy, and bursting with fresh blueberry flavor. Perfect for a healthy breakfast or snack!


Ingredients

  • 3 large eggs, separated
  • ¼ teaspoon cream of tartar
  • ½ cup cottage cheese
  • 1 tablespoon honey or sweetener of choice
  • ¼ teaspoon vanilla extract

 

  • ⅓ cup fresh blueberries

Instructions

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
  • In another bowl, mix cottage cheese, egg yolks, honey, and vanilla until smooth.
  • Gently fold the egg whites into the cottage cheese mixture until just combined.
  • Carefully fold in the blueberries without overmixing.
  • Spoon batter onto the prepared baking sheet in small rounds.
  • Bake for 25–30 minutes until golden brown and set.

 

  • Let cool before serving.

Notes

  • Use fresh or frozen blueberries, but if using frozen, pat them dry first.
