Ingredients
- 3 large eggs, separated
- ¼ teaspoon cream of tartar
- ½ cup cottage cheese
- 1 tablespoon honey or sweetener of choice
- ¼ teaspoon vanilla extract
- ⅓ cup fresh blueberries
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
- In another bowl, mix cottage cheese, egg yolks, honey, and vanilla until smooth.
- Gently fold the egg whites into the cottage cheese mixture until just combined.
- Carefully fold in the blueberries without overmixing.
- Spoon batter onto the prepared baking sheet in small rounds.
- Bake for 25–30 minutes until golden brown and set.
- Let cool before serving.
Notes
- Use fresh or frozen blueberries, but if using frozen, pat them dry first.
