Ingredients
- Muffins:

- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
- Streusel Topping:
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1 1/2 tsp ground cinnamon
Instructions
- Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
- In a medium bowl, mix flour, sugar, salt, and baking powder.
- In a small bowl, combine oil, egg, milk, and vanilla extract. Stir into flour mixture until just combined.
- Gently fold in blueberries.
- Fill muffin cups to the top with batter.
- For the streusel topping, mix sugar, flour, and cinnamon in a small bowl. Cut in the butter until the mixture resembles coarse crumbs. Sprinkle evenly over muffins.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use fresh or frozen blueberries; if using frozen, do not thaw them.
