Ingredients

  • Muffins:
    • 1 1/2 cups all-purpose flour
    • 3/4 cup sugar
    • 1/2 tsp salt
    • 2 tsp baking powder
    • 1/3 cup vegetable oil
    • 1 large egg
    • 1/3 cup milk
    • 1 tsp vanilla extract
    • 1 cup fresh or frozen blueberries
  • Streusel Topping:
    • 1/2 cup sugar
    • 1/3 cup all-purpose flour
    • 1/4 cup butter, cubed
    • 1 1/2 tsp ground cinnamon

Instructions

  • Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  • In a medium bowl, mix flour, sugar, salt, and baking powder.
  • In a small bowl, combine oil, egg, milk, and vanilla extract. Stir into flour mixture until just combined.
  • Gently fold in blueberries.
  • Fill muffin cups to the top with batter.
  • For the streusel topping, mix sugar, flour, and cinnamon in a small bowl. Cut in the butter until the mixture resembles coarse crumbs. Sprinkle evenly over muffins.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw them.
