Description

Ingredients

  • 2 salmon fillets (skin-on, boneless)
  • 1/2 cup all-purpose flour (for dredging)
  • 4 tablespoons unsalted butter
  • 1/4 cup fresh parsley, finely chopped
  • 1 clove garlic, minced
  • Zest and juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • Optional: lemon wedges for serving

 


Instructions

  1. Prepare the Salmon:
    • Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
    • Dredge the salmon fillets in the flour, shaking off any excess.
  2. Cook the Salmon:
    • In a large skillet over medium heat, melt 2 tablespoons of butter.
    • Once the butter is foamy, add the salmon fillets, skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip and cook the other side for an additional 3-4 minutes or until the salmon is cooked through and has a golden crust. Remove salmon from the skillet and set aside.
  3. Prepare the Meunière Sauce:
    • In the same skillet, add the remaining 2 tablespoons of butter. Add the minced garlic and cook for about 1 minute or until fragrant.
    • Add the lemon zest, lemon juice, and chopped parsley. Stir well, scraping any browned bits from the bottom of the skillet. Season with salt and pepper to taste.
  4. Serve:
    • Pour the meunière sauce over the salmon fillets.
    • Garnish with additional parsley and serve with lemon wedges, if desired.

Notes

  • You can use other types of fish if salmon is not available. Trout or seabass would also work well.
  • For added depth, you can capers or almonds to the sauce.
