Ingredients

  • 6 large eggs
  • 4 flour tortillas (10-inch)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 slices bacon, cooked and crumbled
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  • In a large skillet, melt butter over medium heat. Add diced onions and bell peppers, sauté until softened.
  • In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet with the vegetables. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
