Ingredients
- 6 large eggs
- 4 flour tortillas (10-inch)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 slices bacon, cooked and crumbled
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup salsa

- 1 tbsp butter
- Salt and pepper to taste
Instructions
- In a large skillet, melt butter over medium heat. Add diced onions and bell peppers, sauté until softened.
- In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet with the vegetables. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
- Warm the tortillas in a microwave or on a dry skillet until pliable.
- To assemble the burritos, lay each tortilla flat and evenly distribute the scrambled eggs, crumbled bacon, shredded cheese, salsa, and chopped cilantro.
- Fold in the sides of each tortilla and roll them up tightly to form burritos.
- Serve immediately, or wrap in foil and refrigerate for up to 3 days. Reheat in the microwave or a skillet before serving.
Notes
- Customize your burritos by adding ingredients like avocado, black beans, or jalapeños.
- For a vegetarian option, omit the bacon and add more veggies or beans.
- To make freezer-friendly burritos, wrap them tightly in foil and freeze for up to 1 month. Reheat in the microwave or oven.
