Ingredients
- 4 large flour tortillas
- 6 large eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 1 tbsp butter
- Salsa and sour cream (optional, for serving)
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Heat a skillet over medium heat and melt the butter.
- Pour the egg mixture into the skillet, stirring occasionally until fully cooked.
- Remove the eggs from the skillet and set aside.
- Place a tortilla in the skillet over medium heat.
- Sprinkle 1/4 cup of cheese evenly over half of the tortilla.
- Add a portion of the scrambled eggs, bell pepper, tomatoes, red onion, and cilantro on top of the cheese.
- Fold the tortilla in half over the filling and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve with salsa and sour cream if desired.
Notes
- Customize your quesadillas with additional fillings like bacon, sausage, or avocado.
- For a spicier kick, add some chopped jalapeños to the filling.
