Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 1 tbsp butter
  • Salsa and sour cream (optional, for serving)

Instructions

  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat a skillet over medium heat and melt the butter.
  • Pour the egg mixture into the skillet, stirring occasionally until fully cooked.
  • Remove the eggs from the skillet and set aside.
  • Place a tortilla in the skillet over medium heat.
  • Sprinkle 1/4 cup of cheese evenly over half of the tortilla.
  • Add a portion of the scrambled eggs, bell pepper, tomatoes, red onion, and cilantro on top of the cheese.
  • Fold the tortilla in half over the filling and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
  • Repeat with the remaining tortillas and filling.
  • Cut each quesadilla into wedges and serve with salsa and sour cream if desired.

Notes

  • Customize your quesadillas with additional fillings like bacon, sausage, or avocado.
