Description

Buffalo Chicken and Cheddar Rice is a quick and flavorful one-pan meal featuring tender chicken, spicy buffalo sauce, and creamy cheddar cheese. This easy recipe combines savory buffalo chicken with fluffy rice, creating a delicious dish perfect for busy weeknights. Top with green onions or ranch dressing for added flavor. It’s a crowd-pleasing option for those who love a little kick with their comfort food!

Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1 cup buffalo sauce
  • 1 cup white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing (optional, for drizzling)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 6-7 minutes.
  • Stir in buffalo sauce, coating the chicken well. Remove chicken from the skillet and set aside.
  • In the same skillet, add rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  • Stir the cooked chicken back into the rice. Add shredded cheddar cheese and stir until melted and creamy.
  • Serve hot, garnished with sliced green onions and drizzled with ranch dressing if desired.

Notes

  • For a spicier dish, add extra buffalo sauce or a pinch of red pepper flakes.
  • Use brown rice for a whole-grain option, adjusting the cook time accordingly.
