Description
This Cajun sausage and rice skillet is a flavorful, one-pan meal made with smoked sausage, bell peppers, onions, and Cajun seasoning. Perfect for busy weeknights, it's easy to prepare and bursting with bold Southern flavors.
Ingredients
- 1 lb smoked sausage, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp Cajun seasoning
- ½ tsp smoked paprika
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned.
- Add diced onion and bell pepper; sauté until softened. Stir in minced garlic and cook for another 30 seconds.
- Sprinkle in Cajun seasoning, smoked paprika, salt, black pepper, and red pepper flakes. Stir well.
- Add the uncooked rice and stir to coat with the seasonings. Pour in diced tomatoes and chicken broth.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until rice is tender.
- Remove from heat, fluff with a fork, and garnish with green onions before serving.
Notes
- Use andouille sausage for an authentic Cajun flavor.
- Adjust spice levels by adding more or less Cajun seasoning and red pepper flakes.
- Substitute brown rice, but increase the cooking time accordingly.
