Description

This Cajun sausage and rice skillet is a flavorful, one-pan meal made with smoked sausage, bell peppers, onions, and Cajun seasoning. Perfect for busy weeknights, it's easy to prepare and bursting with bold Southern flavors.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned.
  • Add diced onion and bell pepper; sauté until softened. Stir in minced garlic and cook for another 30 seconds.
  • Sprinkle in Cajun seasoning, smoked paprika, salt, black pepper, and red pepper flakes. Stir well.
  • Add the uncooked rice and stir to coat with the seasonings. Pour in diced tomatoes and chicken broth.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until rice is tender.
  • Remove from heat, fluff with a fork, and garnish with green onions before serving.

Notes

  • Use andouille sausage for an authentic Cajun flavor.
  • Adjust spice levels by adding more or less Cajun seasoning and red pepper flakes.
  • Substitute brown rice, but increase the cooking time accordingly.
