Ingredients

  • 1 cup rolled oats
  • 2 cups milk (or dairy-free alternative)
  • 1 cup finely grated carrots
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tbsp shredded coconut (optional)

Instructions

  • In a medium saucepan, combine the oats, milk, grated carrots, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt.
  • Bring to a boil over medium-high heat, then reduce the heat to low and simmer, stirring occasionally, for about 10 minutes or until the oats are tender and the mixture is creamy.
  • Stir in the raisins, nuts, and coconut, if using.
  • Serve hot, topped with additional nuts, coconut, or a drizzle of maple syrup if desired.
