Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped shallots or red onion
  • 1 clove garlic, minced
  • 1 cup champagne (or a good quality sparkling wine)
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh parsley
  • Optional: 1 teaspoon Dijon mustard for added flavor


Instructions

  1. Prepare the Chicken: Season chicken breasts with salt and black pepper on both sides.
  2. Brown the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add chopped shallots or red onion. Sauté until translucent, about 2-3 minutes. Add minced garlic and sauté for an additional 30 seconds.
  4. Deglaze with Champagne: Pour the champagne into the skillet, scraping up any brown bits from the bottom. Allow to simmer and reduce by half.
  5. Finish the Sauce: Add heavy cream, butter, and Dijon mustard (if using) to the skillet. Stir well, letting the sauce simmer and thicken for 2-3 minutes.
  6. Return Chicken to the Pan: Add the chicken breasts back to the skillet, turning to coat them in the sauce. Simmer for another 5 minutes or until the chicken is cooked through.
  7. Serve: Sprinkle with chopped fresh parsley and serve hot, drizzling extra sauce over the top.
