Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tsp dried Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Slice each chicken breast to create a pocket, being careful not to cut all the way through.
- In a skillet, melt butter over medium heat and sauté mushrooms, garlic, and Italian seasoning until soft. Season with salt and pepper.
- Stuff each chicken breast with the mushroom mixture and cheese. Secure with toothpicks.
- Heat olive oil in a pan over medium-high heat. Sear stuffed chicken for 3–4 minutes per side, until golden brown.
- Transfer to the oven and bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
- Rest for 5 minutes before serving.
