Description

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup salsa
  • 2 cups beef or chicken broth
  • 2 cups uncooked pasta (penne or shells)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Drain excess fat.
  • Add onion and garlic to the skillet. Cook for 2-3 minutes until softened.
  • Stir in taco seasoning, salsa, and broth. Bring to a boil.
  • Add uncooked pasta to the skillet. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  • Stir in cheddar and Monterey Jack cheese until melted and creamy. Mix in sour cream for added creaminess.
  • Garnish with fresh cilantro, if desired, and serve warm.
