This Cheesy Taco Pasta recipe combines taco-seasoned ground beef, pasta, and loads of melty cheese for an easy, family-friendly dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 cup salsa
- 2 cups beef or chicken broth
- 2 cups uncooked pasta (penne or shells)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Drain excess fat.
- Add onion and garlic to the skillet. Cook for 2-3 minutes until softened.
- Stir in taco seasoning, salsa, and broth. Bring to a boil.
- Add uncooked pasta to the skillet. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
- Stir in cheddar and Monterey Jack cheese until melted and creamy. Mix in sour cream for added creaminess.
- Garnish with fresh cilantro, if desired, and serve warm.
