Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup sour cream
  • 1/2 onion (diced)
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 2 cups cheddar cheese (shredded)
  • 1 package frozen tater tots (32 oz)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1 tbsp olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until softened.
  • Add ground beef to the skillet and cook until browned. Drain any excess fat.
  • Stir in cream of mushroom soup, sour cream, garlic powder, paprika, salt, and pepper. Mix in the frozen vegetables and 1 cup of cheddar cheese.
  • Pour the beef mixture into a greased 9x13-inch baking dish.
  • Arrange the frozen tater tots on top of the beef mixture in a single layer.
  • Sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
  • Bake for 25-30 minutes, until the tater tots are golden brown and the cheese is melted.
