Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 3/4 cup pumpkin puree
  • 2 cups semi-sweet chocolate chips

Instructions

 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. In a large bowl, mix melted butter, brown sugar, and granulated sugar until well combined.
  4. Stir in the egg yolk, vanilla extract, and pumpkin puree until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, make sure not to overbake. The centers should still look slightly underdone when you remove them from the oven.
  • These cookies can be stored in an airtight container at room temperature for up to 5 days.
  • You can add a pinch of allspice for extra warmth and flavor.
