Ingredients
- 1 lb chicken breast, cubed
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large ovenproof skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add chicken, season with salt and pepper, and cook until browned.
- Stir in orzo and diced tomatoes. Add chicken broth and bring to a simmer.
- Mix in spinach until it wilts.
- Remove from heat, sprinkle mozzarella and Parmesan cheese on top.
- Bake in the oven for 20-25 minutes, or until the orzo is tender and the cheese is bubbly and golden.
- Serve hot.
Notes
- You can add other vegetables like bell peppers or mushrooms for added flavor and nutrition.
