Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Add chicken, season with salt and pepper, and cook until browned.
  4. Stir in orzo and diced tomatoes. Add chicken broth and bring to a simmer.
  5. Mix in spinach until it wilts.
  6. Remove from heat, sprinkle mozzarella and Parmesan cheese on top.
  7. Bake in the oven for 20-25 minutes, or until the orzo is tender and the cheese is bubbly and golden.
  8. Serve hot.

Notes

  • You can add other vegetables like bell peppers or mushrooms for added flavor and nutrition.
  • If you prefer a crispier top, place the skillet under the broiler for a few minutes after baking.
