Ingredients
- 2 slices of sourdough or your favorite bread
- 1 grilled chicken breast (or 1 cup shredded rotisserie chicken)
- 1/2 avocado, mashed or sliced
- 2 slices of cheddar, provolone, or mozzarella cheese
- 1 tbsp mayonnaise or chipotle mayo
- 1 tbsp butter (for toasting)
- Optional: Lettuce, tomato slices, or red onion
Instructions
- Heat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- On the non-buttered side of one slice, spread mayonnaise and layer the grilled chicken, mashed or sliced avocado, and cheese. Add optional toppings like lettuce or tomato, if desired.
- Top with the second slice of bread, buttered side facing out.
- Place the sandwich in the skillet and cook for 2-3 minutes on each side, or until the bread is golden and the cheese is melted.
- Remove from the skillet, slice in half, and serve warm.
