Savor the taste of these irresistible Chicken Enchiladas. Packed with tender chicken, gooey cheese, and a rich, flavorful enchilada sauce, this dish is a family favorite that's quick and easy to prepare for any weeknight dinner.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 8 flour tortillas
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add shredded chicken, diced green chilies, cumin, chili powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2 minutes.
  • Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with the chicken mixture and a sprinkle of cheddar and Monterey Jack cheese. Roll up and place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Garnish with fresh cilantro before serving.

Notes

  • For a spicier version, add a chopped jalapeño to the chicken mixture.
  • Serve with sour cream, guacamole, and salsa on the side.
