Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chilies
- 8 flour tortillas
- 1 small onion, diced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add shredded chicken, diced green chilies, cumin, chili powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2 minutes.
- Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
- Fill each tortilla with the chicken mixture and a sprinkle of cheddar and Monterey Jack cheese. Roll up and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
- Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add a chopped jalapeño to the chicken mixture.
- Serve with sour cream, guacamole, and salsa on the side.
