Ingredients

  • 2 tbsp olive oil
  • 1 packet fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 cups cooked rice
  • 1 lime, juiced
  • Fresh cilantro, chopped
  • Optional toppings: avocado slices, sour cream, shredded cheese, salsa

Instructions

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
  • Sprinkle fajita seasoning over the chicken and stir to coat evenly. Remove chicken from the skillet and set aside.
  • In the same skillet, add remaining olive oil, bell peppers, and onion. Sauté until vegetables are tender, about 5 minutes.
