Ingredients

  1. 4 boneless, skinless chicken breasts, diced
  2. 1 can (10.5 oz) cream of chicken soup
  3. 1 can (10.5 oz) cream of mushroom soup
  4. 1 cup sour cream
  5. 1 cup grated cheddar cheese
  6. 1/2 cup milk
  7. 1 small onion, finely chopped
  8. 1 cup frozen mixed vegetables (like peas and carrots)
  9. 1 tsp garlic powder
  10. Salt and pepper to taste
  11. 1 cup breadcrumbs or crushed Ritz crackers
  12. 2 tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, milk, garlic powder, salt, and pepper. Mix until smooth.
  3. Stir in the diced chicken, chopped onion, and frozen vegetables.
  4. Transfer the mixture into a greased casserole dish.
  5. In a separate bowl, mix the breadcrumbs or crushed Ritz crackers with melted butter. Sprinkle this mixture over the top of the chicken mixture in the casserole dish.
  6. Evenly sprinkle the grated cheddar cheese on top.
  7. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the mixture is bubbly.
