Ingredients

  • 2 chicken breasts, diced
  • 4 medium potatoes, peeled and chopped

  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 5 cups chicken broth
  • 1 cup water
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned. Remove and set aside.
  • In the same pot, sauté the onion, garlic, carrots, and celery until softened.
  • Add the potatoes, thyme, rosemary, and return the chicken to the pot. Stir to combine.
  • Pour in the chicken broth and water. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
