Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Salsa, sour cream, and guacamole for serving

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, sauté until softened.
  • Add shredded chicken to the skillet, season with salt and pepper, and cook until heated through.
  • Remove chicken mixture from the skillet and set aside. Wipe the skillet clean.
  • Place one tortilla in the skillet over medium heat. Sprinkle cheese evenly over the tortilla.
  • Add the chicken mixture on top of the cheese.
  • Place another tortilla on top, press down gently.
  • Cook until the bottom tortilla is golden brown and the cheese is melted, about 2-3 minutes.
  • Carefully flip the quesadilla and cook the other side until golden brown.
  • Remove from the skillet, let cool slightly, then cut into wedges.
  • Serve with salsa, sour cream, and guacamole.
