Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tbsp olive oil
- Salt and pepper to taste
- Salsa, sour cream, and guacamole for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, sauté until softened.
- Add shredded chicken to the skillet, season with salt and pepper, and cook until heated through.
- Remove chicken mixture from the skillet and set aside. Wipe the skillet clean.
- Place one tortilla in the skillet over medium heat. Sprinkle cheese evenly over the tortilla.
- Add the chicken mixture on top of the cheese.
- Place another tortilla on top, press down gently.
- Cook until the bottom tortilla is golden brown and the cheese is melted, about 2-3 minutes.
- Carefully flip the quesadilla and cook the other side until golden brown.
- Remove from the skillet, let cool slightly, then cut into wedges.
- Serve with salsa, sour cream, and guacamole.
