Ingredients

  1. 500g chicken pieces (with bones)
  2. 1 large onion, finely sliced
  3. 3-4 cloves garlic, minced
  4. 1-inch ginger, minced
  5. 2-3 green chilies, slit
  6. 1 cup yogurt, whisked
  7. 1/4 cup oil or ghee
  8. 1 tsp red chili powder
  9. 1/2 tsp turmeric powder
  10. 1 tsp coriander powder
  11. 1/2 tsp garam masala
  12. 1 tsp cumin seeds
  13. Salt to taste
  14. Fresh coriander leaves, for garnish


Instructions

  1. In a large pot or pan, heat the oil or ghee. Add the cumin seeds and wait until they sizzle.
  2. Add the finely sliced onions and sauté until they become golden brown.
  3. Add the minced ginger and garlic to the pot and sauté for another 2 minutes.
  4. Incorporate the chicken pieces into the pot, and fry until they are browned on all sides.
  5. Mix in the red chili powder, turmeric, and coriander powder. Stir well to ensure the chicken is well coated with the spices.
  6. Gradually pour in the whisked yogurt, stirring continuously to prevent curdling. Add the slit green chilies.
  7. Once the yogurt is well incorporated, add enough water to cover the chicken and bring the mixture to a boil.
  8. Reduce the heat, cover, and let it simmer until the chicken is tender and fully cooked.
  9. Sprinkle in the garam masala and adjust salt according to taste.
  10. Garnish with fresh coriander leaves before serving.
